Fried lizard and crispy locust, anyone? Get ready for two new odysseys into Thailand's gastronomy.

The CIA plans to infiltrate Thailand next week — and they’re looking for a few good ones to join them. We’re talking about the Culinary Institute of America, of course, and their eight-day gastronomic tour of Thailand, the newest addition to their “World of Flavor” travel program (a joint venture with gourmet kitchen outfitter Viking). Bangkok native and celebrated New York chef Ian Chalermkittichai leads the way on November 8, beginning in the capital with a private longboat tour and a visit to the floating market. Moving north to Chiang Mai, you’ll raid a noodle factory, ride an artistic pachyderm, and visit the nighttime bazaar. Your stylish base is the Four Seasons Chiang Mai — where you’ll never be too far from the house kitchen.

More adventurous taste buds should head to Thailand’s northeastern Isan Plateau in March, when Globetrotting Gourmet’s inaugural Isan Food Festival celebrates this region’s exotic cuisine with a 10-day tour and master cooking classes. Heavily influenced by the gastronomy of neighboring Laos, Cambodia, and Vietnam, Isan cuisine is not for the faint of heart — think fried lizard, ant egg soup, and crispy locust.
